Spring Grilling Recipes to Dive Into


Now that you're revved up about grilling with Current, here's a tantalizing shrimp skewers recipe that I used to kickstart my spring grilling journey:



Grilled Shrimp and Artichoke Skewers with Feta Sauce

Ingredients:

3 tablespoons extra virgin olive oil

1 tablespoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper

1/2 teaspoon ground cinnamon

4 cloves garlic, finely chopped or grated

1 inch fresh ginger, grated

1/4 cup fresh parsley, chopped

Crushed red pepper flakes

Salt and black pepper

1 pound peeled and deveined shrimp

Juice of 1 lemon (about 2 tablespoons)

1 cup of marinated artichokes


Feta Sauce:

6 ounces feta cheese

1/4 cup plain Greek yogurt

Juice from 1 lemon

1 cup chopped fresh dill

1/4 teaspoon smoked paprika


Instructions:

1. Preheat your Current Grill to 550 degrees.

2. In a bowl, combine 3 tablespoons olive oil, smoked paprika, cumin, cayenne, cinnamon, 3 cloves garlic, ginger, cilantro, parsley, a pinch of red pepper flakes, salt, and black pepper. Add the shrimp and toss to coat. Marinate for 15 minutes or up to overnight in the fridge.

3. To make the feta sauce, combine feta cheese, Greek yogurt, lemon juice, herbs, and smoked paprika in a blender or food processor. Blend until creamy.

4.. Thread the marinated shrimp and artichokes onto skewers.

5. Grill the skewers until the shrimp is cooked through and vegetables are lightly charred, turning occasionally, about 6-8 minutes.

6. Serve the grilled chicken skewers on grilled tortillas and drizzled with feta sauce


Grilled Peaches with Goat Cheese, Hot Honey and Mint



Ingredients:

2 ripe peaches, with pit removed, cut into thick slices

1/4 cup of Hot honey

A small handful of mint leaves, thinly sliced

2 tablespoons mascarpone cheese

2 tablespoons goat cheese

The zest from 2 lemons


Instructions:

1. Preheat your Current Grill to 350 degrees.

2. Lightly brush the cut side of your peaches with olive oil

3. Grill the peaches just until they have charred grill marks across the surface, and then remove them from the grill.

4. To make the filling, stir together goat cheese, mascarpone cheese and lemon zest until well combined. Set aside.

5. To assemble, spoon about 1 tablespoon of the cheese filling into the center of each peach slice. Drizzle the Hot honey over top and finish with sliced mint.
